Tukyan Chai Latte

Chai can be made as a tea or latte and the recipe we are giving you will work for both.  The only differrence between the two is the milk.  

Ingredients you will need:
  • plain black tea  (1 bag for every 6 ounces)
  • nutmeg  (3 whole pieces)
  • cloves  (quarter sized amount)
  • ginger  (1 tbsp minced, or 3/4" smashed)
  • cinnamon  (anywhere from 3-10)
  • anise  (2-5 stars, depending on your preference of black licorice.  2-3 is unnoticeable)
  • honey (at least 2 tbsp, but as much to taste.  Too much can always be fixed)
  • black pepper (3-5 whole peppercorns)
  • cardamom  (3-5 pieces)
  • vanilla  (about 1 tbsp)
  • milk  (can either omit or use upto 50% of drink size)

Once you get the hang of it, you can add, change or subtract ingredients to your liking.  
Many times, I made it when something ran out and it did not make a big difference in taste.
I usually make a quart of tea concentrate at a time, and use a separate pot if I want to make lattes as a finished product.

**Do NOT use cinnamon, if you are taking metformin for your diabetes** 

Take 8 cups of water to a boil with all the dry spices.  
Once boiling, turn down to simmer and add vanilla and teabags.
Let simmer for 15 minutes.  
Stir in honey and strain or fish out all the teabags and spices.

What you now have, is the base to make it either a tea, a latte or to save for upto 4 days in your fridge.

*As a tea:  pour into cup and sweeten to taste.  Does not mix with artificial sweeteners.  If too strong, ass more water.

*As a hot latte:  pour some into pot, add milk and simmer while stirring, until hot.

*As an ice tea or latte:  pour into cup, add milk if its going to be a latte, and add plenty of ice.  Don't worry. It shouldn't be  weak, for you just made a concentrate.

*To store:  For saving what's left, just put into container and refridgerate.  Always shake or stir before pouring.  Follow drink directions above.  Enjoy your holistic medicine!
