Tukyan Carrot Cake


·                     4 EGGS
·                     1 CUP VEGETABLE OIL
·                     2 CUPS FLOUR
·                     2 CUPS SUGAR
·                     2 TSP CINNAMON
·                     2 TSP BAKING SODA
·                     4 CUPS GRATED CARROTS
·                     2/3 CUP CHOPPED NUTS


HEAT OVEN TO 350*. 
GREASE & FLOUR TWO 9" PANS. 
IN LARGE MIXING BOWL, BEAT EGGS UNTIL FOAMY;  ADD OIL IN A THIN STREAM & BEAT WELL. 
MIX FLOUR, SUGAR, CINNAMON AND BAKING SODA TOGETHER; ADD TO EGG MIXTURE & MIX WELL. 
FOLD IN CARROTS AND NUTS 
POUR INTO PREPPED PANS & BAKE FOR 30-35 MIN. 
COOL 10 MIN.
