Tasty Clam Fritters


10 oz Fancy Whole Baby Clams, drained and minced
Reserve liquid from clams
2 lightly beaten eggs
½ cup milk
¾ cup flour
1 tsp baking powder
¼ tsp salt
1/8 tsp black pepper
Vegetable oil for frying

  •     1 tsp adobo
  •     1 tbsp sofrito


In medium bowl, combine all ingredients, except the oil for frying.
Pour oil at about ½ inch deep, in skillet and heat up. 
Drop batter by tbsp. into oil.
Brown for 4-5 minutes, turning once.  
Drain excess grease.
Serve with either tartar sauce or cocktail sauce.

Makes about 24 fritters
