Cornmeal Pancakes

Ingredients:

  • 2 cups cornmeal
  • 1/2 cup flour
  • 1 tsp baking soda
  • 1 tsp salt
  • 2 cups buttermilk
  • 2 tbsp molasses
  • 2 eggs (optional)

Directions: 
  1. In small bowl, mix eggs, buttermilk & molasses.  
  2. In separate larger bowl, mix dry ingredients.  Then mix all ingredients together.
  3. Grease & preheat skillet.  
  4. Cook for about 20 minutes. 
  5. Serve hot & enjoy.
